Diabetes Mellitus has three category types: Type 1, Type 2 and Gestational diabetes. Although these diabetes types result from differing physiological malfunctions, the end result is that the patient still suffers from diabetes, or better said, the diabetic suffers from an increased and unnatural level of blood sugar in the body.

Dr. Brett Ferdinand explains how diet can affect the progression of diabetes. “Without adhering to a diabetes recipe or diet, diabetics, especially those with Type 2 diabetes mellitus, run the risk of overly taxing the body’s organs”, says Dr. Ferdinand. “And, the best diabetic diet is one that controls and regulates blood sugar levels. It should be noted that 2 1/2 hours of exercise each week is a paramount complement to a diabetic diet.”

Like any cooking really, diabetic cooking requires planning. Every grocery store these days offers diabetic foods and some even prepare diabetic meals in the deli section. We offer some easy and enjoyable diabetic recipes to consider and, in addition, offer an education on what foods are better served to diabetics and the foods that diabetics should stay away from or at least eat minimally. “Since most Type 2 diabetes mellitus cases are caused by obesity and aging,” explains Dr. Ferdinand, “preparing diabetic recipes and eating diabetic meals is really the way we should have been eating in the first place: healthy!”

The American Diabetes Association (ADA) outlines healthy food choices by using food groups instead of carbohydrate and protein groups. “In other words”, explains Dr. Ferdinand, “you won’t see breads in the same group as cheeses and milk. The healthier foods such as grains, fruits, starches and vegetables are on the bottom levels of the pyramid meaning they are healthier foods and should be part of every meal for diabetics.”

Mozzarella Cauliflower Bake

  • ½ head of Cauliflower, rinsed and chopped into 1 inch floweret’s – 2 cups
  • 1 Large Fresh Tomato, rinsed and chopped
  • ¼ cup Mozzarella Cheese – shredded
  • 1 Extra Large egg, beaten
  • ¼ cup Parmesan Cheese – grated
  • 1 Tbsp Extra Virgin Olive Oil


  • Spread Extra Virgin Olive Oil over bottom and sides of 6 x 8 inch glass baking dish
  • In a medium sized bowl, beat egg and add cheeses, stirring until combined
  • Arrange cauliflower and tomato in baking dish
  • Pour egg and cheese mixture over cauliflower/tomato combination
  • Bake at 325 degree oven for 20 minutes
